Garlic,cheese and thyme Irish soda bread

imageYesterday,I ran out of bread and I didn’t want to make the usual bread,I wanted to experiment again with a new recipe… So,while Anna was catching some Z’s( I love this expression!) and finally,I found some time to relax and put myself together,I found on the internet a gluten free soda bread recipe  from Betty Crocker..I loved the bread was looking like ,but I didn’t want any sweetness into it.

I added:

  • 1/2 tsp garlic powder
  • 1 1/2 cup all purpose GF flour ( I used Pamela’s Artisan Flour Blend)
  • 1 tsp fresh thyme
  • 1/3 cup smoked Gouda,shredded,or any other cheese of your choice
  • a pinch of coriander powder ( optional)
  • a pinch of anise powder (optional)
  • a pinch of white pepper( don’t put much,because it has strong flavor!)


It’s my mom’s habit to add coriander and anise powder into the bread. It makes it so flavorful!!



Truth is,I’ve never taste the real Irish soda bread and I have no idea if the gluten free version is close enough to the original..! I hope, I will not disappoint any Irish viewer!!

Nevertheless,the results were undoubtedly stunning and the bread came out scrumptious,crispy outside and fluffy on the inside!


I fell in love with this bread! I’ll make it again and again!


2 chocolate Cake Balls!

Few days ago,I saw someone on TV making cake pops,but unfortunately, I didn’t have the sticks,neither All purpose flour,so I was trying to find a coconut flour cake recipe And so I found it.. But the cake was extremely dense and I had to add something to make it moist and fluffy. I made this coconut flour cake balls,and of course I add couple more things…!!

I added:

  • 1/2 cup melted chocolate chips into the batter
  • 1 tsp. almond extract
  • 1/3 cup coconut cream

I divided  the batter in two to make a dark chocolate cake and I added:

  • 1/3 cup cocoa powder
  • 1 tbsp dark rum

Instead of cake pan,I used muffin tins,because there were easy to use later on!

when the muffins are done,let them cool completely. In two separate balls,crumble the muffins. There were so moist and fluffy,that I didn’t have to add any cream cheese to make it lookPrepare a baking sheet covered with wax paper or parchment,take a bit of a cake mixture and roll it into a smooth ball. There were so moist and fluffy and I could easily roll it into a ball,that I didn’t have to add any cream cheese to make it like the usual cake mixture. But if it doesn’t,add few spoons of coconut cream.

Let it on the fridge for couple of hours. After you refrigerate them,cover them into a melted white chocolate and melted semi-sweet chocolate.

Unfortunately, I was trying to find my photos in my camera,but accidentally,I deleted the photos that I was preparing the  cake,but I have the results!!

And there are great!! So moist and delightful! We sure,devour them all!








Chocolate covered granola balls!

A month now,I’m really exhausted!My spirits are kind of low and caffeine became my best pal!Even my favorite music sounds like a bunch of noise in my ears!I feel that my multitasking skills are gone…! Is so difficult to keep your house clean and at the same time,keep an eye on your 13 month old little Tarzan that is so attached to me,that I cannot even go to the bathroom by myself!

I’m so glad she’s so full of energy,but I feel that she sucks all my energy! When she sleeps in the afternoon for an hour and a half, there are so many things that I need to do…blog a recipe,clean my house, take a shower,watch a movie,cook,and relax!I’m pretty much sure that busy moms understand me! Now I know how my mom was trying to do everything and to us ( my brother and I),was so normal seeing her with a mop and a duster all the time,and she was always telling us “You’ll be parents,and especially you Rita,you’ll be a mom and a housewife and you’ll see how hard is it!’ and now I understand why she said these words!

At least one thing that makes me happy is that Anna loves to see   me cooking and she wants to be my little assistant!

Days ago,I found this recipe,so I  bought GF granola with dried fruits and I’ve changed it a little bit and even George found these energy balls delightful and couldn’t stop eating them!

In the original recipe I added:

  • 1/2 tsp. almond extract
  • 1/4 cup fresh squeezed orange juice and the orange zest
  • I substitute the peanut butter with  almond butter.
  • 1/4 pistachios


I topped them with melted white chocolate,some others with semi-sweet chocolate and sea salt on top and the others I roll them in rosewater and then in  shredded coconut. The granola balls were delicious! So elegant and guilt free!  The almond extract made the difference! Anna love them! Of course I gave her with the rosewater and coconut,because we avoid to give her chocolate..!


I put some in a party bag and gave them as a gift treat to my friend…!
